When the stars are announced
The stars in Florence come from the MICHELIN Guide Italy, revealed once a year, usually in November. The latest selection was revealed on 19 November 2025 at the Teatro Regio, Parma. How the prices are counted
Per person, before service
Every figure is for one guest. Italian menu prices include VAT and usually service, though some hotel restaurants add 10%. Many restaurants also charge a cover (coperto) of about €3–€12, which isn't counted here. Prices shown in other currencies use the day's exchange rate and are approximate.
Where prices come from
Dinner is the restaurant's main tasting menu, and wine is its wine pairing where one is offered. Prices come from each restaurant's own website and menus where they're published, otherwise from recent Italian press and Gambero Rosso's round-up of tasting-menu prices. Lunch is the restaurant's lunch menu, or the same menu where it's served at lunch.
