How the prices are counted

Per person, before service

Every figure is for one guest and excludes service charge, which most UK restaurants add at 10–15% (12.5–15% in London). Supplements such as caviar or truffle courses are left out. Prices shown in other currencies use the day's exchange rate and are approximate.

Where prices come from

Dinner is the main tasting menu where there is one, and wine is the cheapest pairing for it. We take prices from each restaurant's own website where they're published, otherwise from recent reviews and booking sites.
