How to book

• Know the release date. Most of these restaurants open bookings a set number of weeks or months ahead, or on a fixed day each month. Their own websites say when.
• Book direct. Use the restaurant’s website or the platform it links to, and join the waiting list if the date you want has gone; cancellations come up, especially a day or two before.
• Expect a deposit. Many take a deposit or the full menu price when you book, with firm cancellation terms.

• Check the service charge. UK menu prices usually include VAT, and most restaurants add a discretionary service charge of 12.5% to 15% on top.
